I created unicorn toast about a year ago. Since then, the trend has taken off like I could've never imagined. I'm sure by now everyone's seen the new beverage from a certain little coffee shop... A lot of people have contacted me and wondered if I was involved or if I was reached out to by the corporation; the answer is no. I was also contacted by the @nytimes to talk about the entire unicorn food trend and what I think about the latest phenomenon. All beet everythinggggg on this lovely #toasttuesday It's no secret I'm obsessed w/ all things beets and using them to create naturally dyed shades of pink - so when I found out @lovebeets had beet powder (basically my new favorite thing/ magical healthy fairy dust ) I was obviously very excited. They also have beet juice & cooked beets so I used them all to create some savory toast (bc go big or go home): beet juice infused almond milk cream cheese topped with everything bagel seasoning & beet powder + beet stars (How many times did I just use the word beet? ) #vibrantandpure

Another day another toast, am I right???? Switching up the color palette today for @qapital (P.S. amazing guesses yesterday- one person got it: the darker blue is butterfly pea flower tea!) Let's talk about a bit of a taboo: money I don't know about you, but all my money seems to disappear when I enter a fancy grocery store (I mean, I buy things like butterfly pea flower tea, passionfruit, kiwi berries... need I say more?) Lately, I've been using @qapital and all it's fun tricks to help myself save some money... so that when Sunday rolls around and I want to buy some overpriced exotic fruit at the farmers market, I can feel free to indulge a bit #qapitalapp #vibrantandpure

Thank you everyone for the sweet comments on my kale/plant toast yesterday, they were so much fun to make I'd also like to clear a few things up: A few people complained that I don't make enough edible food/ that I'm wasting food. First of all, everything I make is edible. My point of saying that I had not eaten this toast (in the state it was photographed), was to be honest! I'm not gonna sit here and tell you guys that plain strips of kale on toast tastes good Sometimes I choose to photograph something like this, in a state where it's artistically pleasing, but wouldn't necessarily be super delicious; that doesn't mean I wasted the food. To eat this toast post photoshoot, I removed the strictly aesthetic touches like gold leaf, and added my favorite toppings like cucumber, avocado and everything bagel seasoning (always). I guess you can't make everyone happy, but just wanted to explain this to anyone who was perturbed. //Also here's a photo from before I messed up the perfectly placed sesame seeds, so at least I'll be able to sleep tonight, phew. #vibrantandpure #planttoast #unicorntoast

It's every kid's favorite activity: kale crafts! Juuuust kidding (unless this in fact is some obscure craft that I didn't know about, in which case, I'm clearly on board). I've been kind of (very) obsessed w/ @plantsonpink lately, and it inspired me to create some plant toast, bc what else would I do? Did I spend 10 minutes meticulously placing sesame seeds on the cacti? Yep! Did they all scatter when I moved the toast to photograph it, yep! I'll probably get over it soon... updates to come. // Beet cream cheese + kale + gold leaf (bc why not.)
